Vegan Chipotle Cashew Sauce

This Chipotle Cashew Cream is smoky, tangy, and irresistibly creamy. It’s freezer-friendly, easy to make, and perfect for drizzling over burritos, tacos, or roasted veggies.

This sauce is the flavour bomb that takes any dish from good to amazing. It’s smoky from chipotles, tangy from lime, and creamy from blended cashews. I love that it’s versatile — it works as a dip, drizzle, or dressing. It’s also meal-prep friendly: you can keep it in the fridge for 5 days or freeze it for quick weeknight meals. Plus, it’s completely plant-based, but no one would ever guess because it tastes so rich and indulgent.

Main Ingredients & Why We Use Them

  • Chipotle Peppers in Adobo Sauce – Smoked jalapeños that bring heat, smokiness, and complexity. 
  • Parsley – Brings a herby unique flavour to mix and balances out the richness of the cashews.
  • Maple syrup – for a hint of sweetness.
  • Cashews – The creamy base that gives this sauce body and richness. Once blended, they mimic a dairy cream perfectly.
  • Garlic – Adds savoury punch.
  • Lemon Juice – Brightens and balances the smokiness.
  • Water – Adjusts consistency for blending.
  • Salt – Enhances all the flavours.

How to Make It

Simply soak the cashews in hot water for 15 minutes, then blend with chipotle adobo sauce, garlic, lime, parsley, maple syrup, water, and salt until silky smooth. Adjust thickness with water if needed.

Variations and Substitutes

For less heat, use less chipotle sauce. Add fresh coriander for an herby twist. Replace lemon juice with lime (I think lime would work better but I didn’t have any left!).

  • Bowl for soaking cashews

How to Serve It

Drizzle over burritos, tacos, or nachos. Use it as a dip for chips or veggies. It also works beautifully as a creamy salad dressing.

Fridge: 5 days.
Freezer: 2 months.
Tip: Freeze in ice cube trays for quick single-serve portions.

Ingredients
  

  • ¾ cup cashews soaked 15 mins in hot water
  • 2 tablespoon adobo sauce from the can
  • 2 garlic cloves
  • juice of 1 lemon
  • ½ cup water or more to blend
  • ½ teaspoon salt
  • 2 tablespoon parsley chopped
  • 1 teaspoon maple syrup

Instructions
 

  • Soak cashews in boiling water for 10-20 minutes until soft.
  • Add all ingredients to a blender and blend until smooth and creamy. Keeps 5 days in fridge or freezes beautifully.
